2006 Jasmine Sonoma County Rose
Bright strawberry & rose aromas
|

On September 7, the first day of our 2006 Harvest, we picked 7.5 tons of Zinfandel and Petite Sirah from our Bismark Mountain Vineyard, with an average Brix of 22.0. The fruit was hand-sorted, de-stemmed, cold soaked overnight for color extraction, and pressed after 20 hours of skin contact. The following week, on September 12, we harvested 3.25 tons of Merlot from block 32 of our Alexander Valley Ranch. These grapes were hand-sorted, de-stemmed and immediately pressed with no skin contact time. Average Brix of the Alexander Valley fruit was 21.7.

The fruit was destemmed, crushed and pumped to tank. The cold must was allowed to sit overnight. We pumped over once the following day and then pressed the cold, sweet must to yield ruby red juice. After racking, the juice was inoculated with the Epernay yeast strain and fermented at 58 degrees in stainless. We aged the wine for a month on lees before filtering and bottling.

Bright strawberry & rose aromas, with balanced levels dryness. Bright acidity and a lingering finish.
