This season marked a return to near normalcy after the remarkably challenging 2006 vintage. A dry winter and very dry spring were followed by moderate summer. Bud break was early and disease pressure was low. Frost was absent, and as a result we entered summer with very dry ground. We set a moderate crop at our Home Ranch vineyard. A heat spike in August had many predicting an early harvest. This proved to be the case for our Elias Pinot. Fruit quality was impeccable. After hand sorting we destemmed the fruit and cold soaked for 8 days before warming and allowing the indigenous yeast to conduct fermentation. The must was both punched down and pumped over to extract color and develop structure. At pressing we spread the grapes in a thin layer in the large Diemme membrane press and pressed gently in manual mode. The wine was aged in our best French cooperage on light lees and racked to brilliance before bottling.
