2016 Elias Cabernet Sauvignon 750ml

Alexander Valley

Vineyard: The Elias 2016 Alexander Valley Cabernet Sauvignon was grown on Hanna’s Red Ranch in Alexander Valley. Below Hoot Owl Creek, this benchland ranch is planted on Clough Series gravelly loam soil. Above Hoot Owl, it is planted on Laughlin Series Sandy Loam. These are soils of two-foot depth and less. The vineyard is planted to 50 acres of Cabernet Sauvignon, 10 acres of Clone 9 Malbec, two-and-a-half acres of clone 3 Merlot, two acres of clone 400 Petit Verdot, and just over a half acre of Saint Macaire. The Cabernet is planted to clones 7, 2 6, 412 and 685.

Vintage 2016: Following adequate winter rains, the 2016 growing season began early again as the trend toward warmer winters continues. There was almost no frost pressure and the season progressed without significant weather worries. A single heat spike in July was short lived. This was followed by a glorious, easy ripening August and September that allowed the grapes to hang until late September into mid-October. Grapes for this blend were harvested from September 27, until October 12 at an average of 25.8o Brix

Winemaking: We hand harvested in the cool hours from midnight to sunrise. The grapes were hand-sorted, destemmed and partially crushed to stainless steel fermentation tanks. Pressing was done to taste, based on daily, at times hourly, tastings of the wines after pumpover, with an average of seven days skin contact. The newly pressed wines were racked to tank and allowed to settle before barreling. The wine was racked three times in its first year and once in its second year. Aging was in 40% new low and medium toast French & Hungarian barrels from Remond, Treuil and Trust.

Elias Status: Natural intensity, richness with only moderate alcohol, intrinsic balance without the need for sugar, aromatic complexity beyond pure fruit. Unadorned beauty that does not belie its provenance.

Tasting Notes Our 2016 Elias Cabernet is a saturated purple. It is redolent of blackberries, plum jam, carbon, wet granite and anisette. These aromas are echoed in the mouth along with notes of Black Russian cherries, coulis de framboise, Madagascar vanilla bean and an exotic flourish of peat and ancho chile. Texturally, it is youthfully taut, a leonine melding of power and grace that though opulent, never becomes jowly. (Tasted 2-26-19)
